This year marks twenty years of luxury camping and dining amongst the gumtrees at Paperbark Camp Jervis Bay, and to celebrate there will be two very special ‘Dinner Under The Stars’ events with one of Australia’s most celebrated chefs, Justin North.
After extensive travels in Africa, Irena & Jeremy Hutchings gave up their comfortable and somewhat typical Sydney life and jobs to follow their dream of opening an Australian version of the luxury safari camps they had enjoyed so much. From humble beginnings, the camp soon evolved from being a peaceful bush retreat to including a beautiful treetop dining room and bar, and over the years has become a much loved destination for those who enjoy life’s more simple pleasures of getting out amongst nature, but without having to give up their creature comforts, including a delicious meal and fine wine.
The Gunyah restaurant has featured in the Sydney Morning Herald Good Food Guide for many years thanks to the efforts of many talented chefs who have taken the reins in the kitchen, honing their skills and making a name for themselves along the way, and continues to be one of the regions premier foodie destinations.
To celebrate this unique blend of tented accommodation with good food and wine amongst the treetops, for two special nights on Saturday 27th April and Saturday 4th May, Justin North, one of Australia’s most celebrated chefs, will be preparing a specially curated banquet dinner together with the kitchen team from the Gunyah restaurant at Paperbark Camp.
Originally from New Zealand, Justin has spent time in some of the worlds greatest kitchens, learning from the best including Raymond Blanc at his 2 Michelin Star kitchen Le Manoir aux Quat’ Saisons. Upon returning to Sydney he joined one of the city’s most exciting kitchen teams at Banc, with Liam Tomlin. Justin ran his own restaurant Becasse between 2001 and 2012, picking up a string of awards and accolades including in 2007 being named in the top 100 restaurants in the world and the coveted restaurant of the year by the Sydney Morning Herald. Justin was awarded the title of 2009 SMH Chef of the Year and in 2010 was named GQ Chef of the Year at the Man of the Year awards. More recently Justin has been consulting on various exciting restaurant rebrandings and refurbishments through his business, Concept Hospitality.
